When should you untap land?
At the beginning of your end step, untap all lands you control. Whenever a player taps a snow land for mana, that player adds one mana of any type that land produced. That land doesn’t untap during its controller’s next untap step.
Can you target an untapped creature with spinal embrace? Yes, you can. The « untap it » part will just not happen, and then the spell will continue to resolve. If it needed the creature to be tapped for it to be a legal target, it would say so: « Gain control of target tapped creature ».

Can mind games target a tapped land? No. For two reasons: 1) Tapping in this case is the cost of an ability, and you cannot respond while a player is paying costs. 2) Tapping lands for mana is a mana ability, and does not use the stack, thus you can’t respond to it.
Can tapped Creatures be attacked?
